Slow Cooker Brunch: Recipes for a Dynamite Spread

When it comes to weekend dining, few meals are as important as brunch. Whether you're preparing for a large gathering with your friends or you're planning a more intimidate meal for two, brunch provides the perfect opportunity to enjoy your favorite breakfast and lunch foods at the same time.

Set up your slow cooker and try one (or all three!) of these delicious dishes to start your weekend off right.

Slow Cooker Banana Cake
Healthy? Check. Tasty? Double Check. Easy to make? With your slow cooker, you can have this delicious dish ready to serve in just a few short hours.

You'll need:

  • 3-4 ripe bananas, mashed
  • 1 tablespoon lemon juice
  • 3 eggs
  • 1 teaspoon vanilla 
  • 3/4 cup softened butter
  • 1 1/2 cups honey
  • 1 1/2 cups milk
  • 3 cups flour
  • 1 1/2 teaspoon baking soda
  • Salt
  • Cream cheese frosting

Coat the bottom of your Crock-Pot® Casserole Crock™ Slow Cooker with nonstick cooking spray. You'll need to blend ingredients in three separate bowls: one for flour baking soda and salt; one for mashed bananas and lemon juice; and a third for creaming together butter and honey. In the third bowl, add eggs after honey and butter are well-blended, then add vanilla and milk. Pour the flour mixture in the third bowl, then stir in the mashed banana blend. Once all the ingredients are blended, spoon them into your slow cooker. Set the appliance to low and allow the cake to cook for three to four hours. When it has cooled, top with your favorite cream cheese icing and serve with sliced bananas.

Cinnamon Roll and Sweet 'Tater Gratin
In the mood for both potatoes and cinnamon rolls? Combine the two with this tasty take on a brunch classic. 

You'll need:

  • 3 pounds sweet potato
  • 3/4 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 4 tablespoons butter
  • 1 package prepared cinnamon roll dough

Begin by peeling your sweet potatoes, then slicing them into small pieces. Line your slow cooker with nonstick cooking spray, then arrange 1/3 of the potatoes on the bottom, topped with 1/4 cup of Parmesan. Layer potatoes and Parmesan two more times. In a separate bowl, mix together cream, salt, pepper and cayenne, then add to the slow cooker. Spread two tablespoons of butter over the top of the dish. 

Open your package of cinnamon rolls and begin to unroll each one. Place individual strips on top of the dish, with the cinnamon side facing down, and create a large bullseye with the dough. When you've used all the rolls, top with the remaining butter then cover. Cook the dish for about four hours on high, then top with icing. 

Due to the slow ramp up, and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
