Instead of suffering this holiday season, consider setting out certain healthier dishes that are low-carb by nature. Use your slow cooker to prep some of these options, and you'll have a much easier time mentally reconciling that second piece of pie.
Veggie-Filled Green Bean Casserole
Someone is going to bring along a green bean casserole to your holiday celebration - why not try this low-carb, healthy take on the seasonal classic? Begin by coating your Crock-Pot® Casserole Crock™ Slow Cooker with nonstick spray. Place 1 1/2 pounds of fresh green beans in a medium-sized pot, add enough water to just cover the vegetables, then allow the green beans to boil for about 10 minutes. After draining, place the green beans in the slow cooker.
In a large bowl, combine 1 cup sliced red pepper, 1 cup carrots, 1 cup kale, 1 cup sliced green pepper, 2 cups chopped mushrooms, 1 clove minced garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 cup milk and 1 10-ounce can mushroom soup. After the ingredients are well-blended, pour the mixture over the green beans, then coat with 1 cup of shredded cheddar cheese. Cover the slow cooker and allow the casserole to cook for 2 1/2 hours on high, or 4 1/2 hours on low.

Spray your slow cooker with a nonstick spray - you can use your rectangular stoneware if you want a more symmetrical dish, but the meal is well-served for any slow cooker. Begin by cracking 12 large eggs into a bowl, then beating well. Pour the eggs in the slow cooker, then add your favorite vegetable by the cup-full. We recommend a cup of sliced red pepper, chopped onion, kale and green beans. Don't forget to top with spices - like salt, pepper and parsley - and 1 cup of cheddar cheese. Cook for 2-3 hours on low and serve warm.
